Originally from Norway, Jon Anders Fjeldsrud moved to London in 1996 to study graphic design, but soon found his calling in hospitality. Beginning as a barback at the 10 Room, he trained under influential bartenders including Dre Masso, Thomas Gillgren and Marco Li Donni, sparking a career that took him through leading venues such as Tokyo Joe, the Sanderson Hotel, Light Bar, Baltic, Rockwell Bar and Café Pacifico, where he worked closely with the late Tomas Estes.
He later joined El Camion and the Pink Chihuahua, working with Dick Bradsell and progressing to manager before supporting Wahaca in launching Southbank Wahaca and London’s first mezcalería. In 2014 he became a brand ambassador for Amathus, representing a wide portfolio of aquavits and agave spirits, before moving to Pernod Ricard UK to champion Del Maguey, Altos Tequila and Åhus Akvavit.
Since the pandemic, Jon has combined bartending with consultancy and brand representation for Dos Hombres, Bruxo, Sin Gusano, Copenhagen Distillery and Dangerous Don. He is currently European Brand Ambassador for Casa Lumbre, supporting brands including Almave, Nixta, Abasolo, Ojo de Tigre, Defrente and Nocheluna. Jon first travelled to Mexico in 2005 and has returned almost every year since.
