With more than ten years shaping London’s independent bar scene, Allison Crawbuck has built a reputation for creating immersive, story-driven drinking experiences. She co-owns The Absinthe Parlour at The Last Tuesday Society, an award-winning cocktail bar housed within the extraordinary surroundings of The Viktor Wynd Museum of Curiosities, and also co-owns The Natural Philosopher, a hidden neighbourhood whisky bar tucked away in East London. As co-founder of Devil’s Botany Distillery, the UK’s first dedicated absinthe distillery, she has played a key role in redefining and revitalising the category for a modern audience. She is also the author of Spirits of the Otherworld, a cocktail book delving into the history of drinking rituals and the occult.
