Paul is the founder of Everleaf non-alcoholic aperitifs, as well as a bartender and conservation biologist. He has been working in the drinks industry for over thirty years and has been a bar owner in London for the last twenty. 

Along with building his own brand and bars, Paul has worked extensively with others around the world, including eight years based in Asia and five in Iceland. He has been associate editor of Drink Magazine Asia, taught spirits courses in Chinese, and judged a variety of bartending and spirits competitions; nothing has been as challenging and rewarding as growing Everleaf though!
