Professor Barry Smith is director of the Centre for the Study of the Senses at the University of London’s School of Advanced Study where he works with neuroscientists and psychologists on the multisensory perception of flavour. He collaborates with chefs and chemists, has published on wine and whisky, and consults regularly for the drinks industry. A frequent broadcaster, Barry wrote and presented a five-part series for BBC Radio 4 on The Art and Science of Blending.
